Smashed Potato Casserole

Ingredients
12 medium red potatoes
1/4 cup plus 1 Tbs olive oil, divided
1/2 tsp salt
2 Tbs butter, room temperature
1 cup sour cream
1/2 cup cheddar cheese, grated
4 slices cooked bacon, finely chopped
1/4 cup green onions, chopped
1/4 cup panko breadcrumbs
2 Tbs parmesan cheese
Directions
- Preheat oven to 375° F. Rub potatoes in 1/4 cup oil and salt; wrap in foil. Place on baking sheet. Bake for 1 hour, or until potatoes are cooked through and soft. Let cool slightly to handle. Heat oven to 425° F.
- Spray bottom of 9 x 13 baking dish with nonstick cooking spray. Place potatoes in dish in single layer; completely fill. Using a potato masher, smash potatoes slightly to break open and flatten. Spread butter over top of potatoes until melted. Spread sour cream over the top. Add cheddar, bacon and onions. In small bowl, combine panko, parmesan and remaining oil. Spread mixture over top of potatoes.
- Place in oven. Cook for 15 minutes, or until top is golden and cheese is bubbly. Remove from oven; serve immediately.
